Mango Salsa
There are so many possibilities when it comes to this salsa; serve on top of lettuce for a quick salad, on a fish taco, with scrambled eggs and black beans, as a side for a barbecue, or simply on its own with corn chips. It will quickly become a staple snack in your home for yourself and the kiddoes and works as a great dish for a potluck with friends and family.

Ingredients
- 1 mango
- 1 tomato
- fresh cilantro or basil, chopped
- fresh parsley, chopped
- juice and zest of one lime
- pinch of salt & pepper
- 2 tbsp olive oil
Instructions
- Dice mango and tomato.
- In a small bowl combine all other ingredients, then add chopped mango and tomato. Store in fridge until ready to eat. It is that simple. Enjoy!
